Tell us about the beginning of your blog ‘Claire K Creations’? 

My blog started way back in 2010. I’d just left my Council job (which I was NOT loving) and a friend said ‘you should start a blog.’ I had no idea what to write about but loved food and cooking... and so Claire K Creations was born. It has grown and changed a lot since those sugar- filled days. Now I’m all about wholefoods and making cooking easy and less stressful. I want to help all mums to declutter, organise and simplify their lives to reduce the overwhelm and give them back some enjoyment. I start with the heart of the home - the kitchen (and the heart of the family - the mum) because without a well-running heart - the rest of the body doesn’t function too well. 


You have a series of eBooks with Nutritionist Shannon Stokes - Can you tell us what these are all about?

I sure do. We first had the idea when our youngest were starting solids. There was just so very much information out there on what was ‘best’ it was completely overwhelming. So we created our own guide - Bub Grubwhich we think, is a complete guide to starting babies on solids when they’re ready (and we tell you how to know when that is too). 

The fun doesn’t stop there though, we also created Crawler Cuisine to Toddler Tucker - a collection of delicious, nutritious, whole food but most importantly - kid-approved - recipes, tips and tricks for feeding little ones from 6 months onwards. As a fellow fussy toddler yourself ... what are your top tips for parents who have a child who would rather run a mile than try one piece of broccoli? 

Oh my goodness karma has actually come back to bite me because I have a pretty fussy eater myself. My ‘rule’ is you must, this sounds a bit gross but ‘touch it with your tongue’ before you can say you don’t like it. I try not to make a big deal of it and just keep serving things even if it’s just a single piece of broccoli. If you could invite any 3 people to a dinner party, who would they be and why? 

Jamie Oliver would be number one. I love him. I love his enthusiasm, everything he stands for and he’s not bad to look at either! 

Wow I really struggle to come up with two other guests. If they’re allowed to be dead then it would be my grandfather who I never got to meet and my great-grandma because from all accounts, we would have a lot to talk about. 


How do you start your day? 

Well there’s how I should start my day and how I actually do. My ideal, which I try to do as often as possible is getting up 15 minutes before my husband, while the kids are still asleep and doing a 10 minute meditation (it’s something I’m really trying to get into to help with anxiety) - I use a podcast - and a few stretches then try and jump in the shower before one of the kids wake up. I always have a cup of hot water with lemon juice before I eat anything. 

 

 What is your guilty pleasure? 

What are they? Haha no I do try and make time for guilty pleasures. Dark chocolate is my favourite - the really dark stuff. I have a slice every night with a cup of tea. I am really a closet Nanna. 


 Favourite budget & kid friendly meal you can whip up in a flash? 

That would have to be my crustless zucchini quiche. The kids just have it as is and we have it with a bit of salad or some extra veggies. It freezes well and you can mix it up with different veggies. Great cold for lunches too!

Serves: 6
Ingredients
5 free-range eggs
1 cup self raising flour (gluten-free if you like)
¼ cup olive oil
375grms zucchinis (3 zucchinis) grated
1 brown onion, diced
200grms finely chopped free-range bacon
1 generous cup grated cheese
 
Instructions
Pre-heat the oven to 175C fan-forced and grease a round quiche dish with a little oil.
In a large bowl, whisk the eggs, flour and oil together until smooth.
Add the rest of the ingredients and mix them in.
Pour the mixture into the quiche dish and bake for 45-50 minutes or until golden on top.
The giant bubble will sink when it starts to cool.
Serve warm straight from the dish.
