For this week’s Meat Free Monday, we’ve found a scrumptious vegetarian fried rice recipe that you can whip up in 10 minutes. Yep, that’s right. All you’ll need is 10 minutes!
Fried rice is an easy and foolproof way to add veggies in their diet, and a whole lot of protein too. And leftovers make for delicious lunch boxes the next day! Feel free to add or take away whatever suits your family best, that's the beauty of stir fries.
The perfect meal for those nights when you'd much rather reach for a bottle of red than a bottle of oil. We've got you covered.

 

You will need
2 tbs sesame oil, divided
2 cloves garlic, pressed
3 eggs
4 cups (800 gm) packaged organic brown rice
1 cup frozen corn
1-2 cups frozen peas
½ tbs rice vinegar
2-3 tbs soy sauce
Fresh chives, basil and baby spinach

 

Method

  1. Heat one tablespoon of sesame oil in a large pan over medium heat. Add the garlic cloves and fry for 1 minute. Crack the eggs directly into the pan, and gently push them around in the pan until barely cooked.
  2. Add the packaged rice, to the pan and stir fry for a few minutes. Add the other tablespoon of oil.
  3. Add the frozen corn, peas, rice vinegar, and soy sauce and stir fry for another 1-2 minutes. Remove from heat, and stir in any additional ingredients, it’s up to you (and how fussy your kids are that day) as to what you add!
