How good is it taking that first bite into a crispy fish finger!! A touch of turmeric in this recipe does just that! The kids will love helping you bake these and eating them :)

 

INGREDIENTS

500g Chunky white fish - skinless and boneless, cut into neat thumb sized strips

100g Plain flour

3 Large eggs, beaten

200g Dried breadcrumbs

Large pinch turmeric (optional)

Vegetable oil, for frying

 

METHOD

1.  Get three bowls divide the flour, egg and breadcrumbs. Beat the eggs and add turmeric to the breadcrumbs if you want the fish fingers to be golden. 

2.  Dip fish finger in the flour, shake off excess, then dip in the egg and roll in the breadcrumbs so it is completely covered. Place on a plate. Repeat for all fish fingers.

3.  Heat oil in a frying pan and cook the fish fingers for 3 - 4 minutes on each side. Place on a tray and put in a low heat oven to keep warn. Alternatively, preheat oven to 200 degrees Celsius fan forced, brush a tray with oil and cook fish fingers for 10 - 12 minutes until golden and cooked through. Turn over fish fingers half way through cooking time.
