Who doesn't love a sushi roll? It still amazes me how much kids love sushi! Bye Bye McDonalds, I say!
Perfect for the kids lunchboxes or even an afternoon snack. It's always fun to let the kids help you make them too. Please note this may end up with rice all over your kitchen floor.
You can also mix up the ingredients adding in extra veggies or using tuna instead of salmon etc. Up to the kids what they enjoy :)
1 Cup Japanese Style Sushi Rice, rinsed
1 Tablespoon seasoned rice vinegar
4 Nori seaweed sheets
1/2 Avocado, sliced lengthways
105g Can red salmon, drained
1/2 Cucumber, cut into thin strips
1 small carrot, grated
Soy sauce, to serve
1. Place the rice and 1 1/2 cups cold water in a saucepan over high heat. Cover saucepan and bring to the boil then reduce heat to low and cook for a further 15 minutes or until rice is soft and liquid absorbed. Remove from heat and let sit for 5 minutes.
2. Place rice and vinegar in a bowl and stir to combine. Allow the rice to cool completely abd stir regularly to prevent rice becoming gluggy.
3. Place a nori sheet shiny side down on a sushi mat. Using wet hands, spread a quarter of the rice mixture over the nori sheet, leaving a 3cm wide border around the edges. Place a quarter of the avocado along the edge facing you then top with salmon, cucumber and carrot. Using the sushi mat roll up firmly to enclose filling. Repeat with remaining nori, rice mixture, salmon and vegetables.
4. Slice each roll into four pieces then wrap in glad wrap.
Note: You will need a sushi mat for this recipe. You can find bamboo sushi mats in the Asian section of the supermarket or at Asian grocery stores.
