Delicious chewy apricot, coconut and popcorn slice... say no more! You're kids are going to love this when they find it in their lunchbox! Easy to make and a fun little treat. A great alternitive to muesli bars.

 

Ingredients
5 cups of popped popcorn
1 cup of chopped apricots
1/2 cup shredded coconut
1/3 cup of coconut oil
1/4 honey
1/2 cup of rice-malt syrup
Teaspoon of cinnamon

 

Method
1. Place popcorn Into a bowl along with the other dry ingredients.

2. Put honey, syrup, cinnamon into a sauce pan a heat until bubbly the pour over the top of the ingredients in the bowl.

3. Spread out in a slice tray and refrigerate for an hour.

4. Once cooled slice up and pop into a air tight container in the fridge!
