This no bake slice is a simple and easy school snack for the kids. 

It provides them with plenty of energy to get the kids through the day and is full of good fats, vitamins and minerals. The kids will love them and so will you!

 

Ingredients
2 cups rolled oats
1/2 cup chopped organic dried apricots
1 cup pitted and chopped Medjool dates
3/4 cup mixed seeds (try sunflower, pepita, sesame, linseed and chia)
Juice of two oranges
Goji berries for sprinkling (optional)

 

Method

Place the oats, seeds and dried fruit in the food processor and pulse until combined and roughly chopped.

Add the orange juice and process again until the mixture begins to stick together.

Tip the mixture into a lined slice tin (mine is 20cm x 20cm) and press down with the back of a wet spoon to flatten evenly.

Refrigerate for at least an hour before cutting into desired slices.

Store in the fridge in a container with a piece of baking paper in between each piece to prevent sticking.
